I can’t think of a better way to kick start Valentines Day than waking up to a serve of this very special smoothie. So full of sparkly colours, flavours and nutrition, how could you resist?

- 2 tsp fresh lime juice
- 1 tsp pomegranate molasses (optional)
- 50ml coconut water
- 1 cup frozen mixed berries
- 1 small hanful of mint (keep 2 sprigs to garnish)
- 2 passionfruit
- 1 cup of thick Greek yoghurt
- 2 tbsp desicated coconut
- 2 tsp pistachio nuts (to garnish)
In a blender, add lime juice, pomegranate molasses, coconut water, mint and frozen berries. Blend until puree.
In two glasses, layer your ingredients including 1/2 a passionfruit, 3 tablspoons of yoghurt, sprinkle of 1 tbsp desicated coconut, berry puree then finish with the remainder of the passionfruit.
Garnish with mint, pistachios and desiccated coconut.
ADDITIONAL: TO MAKE THIS RECIPE VEGAN OR DAIRY-FREE, USE CO-YO (COCONUT YOGHURT). YOU CAN ADD COCONUT SUGAR TO THE PUREE IF YOU WOULD LIKE EXTRA SWEETENESS.
