Cauliflower, pomegranate and pine nut salad

Sunday night dinners is usually a pot luck affair. Something simple and light that we can all eat early, alfresco, while the kids are running around with their cousins or friends from up the road.

I made this salad to accompany my lamb and vegie sausage rolls. I’m not sure which I like best. The sausage rolls were amazing (anything with pastry is spectacular) but the salad was outrageous too. There’s a few things that really make this salad, 1) the yoghurt, 2) the pomegranate and 3) the toasted pine seeds. It all combines into a delicious super easy salad.

You could substitute the nuts with what ever you have in your pantry but just make sure you toast them to amp up that flavour. In there interests of speedy Sunday night cooking, I used Chang’s oriental fried noodle salad dressing, which is THE BEST SALAD DRESSING ON EARTH and for a store bought dressing, has a refined flavour that really makes this salad. But if you want to make your own, I’ve included a dressing recipe below. This salad is truly delicious and I urge you to try it.

Cauliflower, pomegranate and pine nut salad

  • 1 cauliflower cut into florets
  • 1 cup coriander, chopped
  • 1 cup mint, chopped
  • 1/2 cup pine nuts
  • 1/2 pomegranate, seeds removed
  • Thick Greek yoghurt
  • dressing
  • I used Chang's fried noodle salad dressing - a combination of honey, soy and sesame oil - to make your own dressing see below*

Dry fry the cauliflower in a large pan until its starts to brown. I didn't use any oil - but feel free to use oil if you like. Add the pine nuts at the end of the cooking process and brown a little. Cool to room temperature.

In a large bowl, add the cauliflower and pine nuts, herbs, pomegranate. Mix gently and place on a serving dish. Top generously with dressing and large dollops of yoghurt.

To make your own dressing*:

3 tablespoons soy sauce

2 tablespoons rice wine vinegar

1 tablespoon honey

1 teaspoon sesame oil

Combining the above ingredients in a small bowl.
