There is a time and a place for cake mixes and that is when one is very busy having too much fun, at the snow, its cold, and you want something crazy delicious too eat (like a piece of double chocolate cheesecake brownie) in front of the fire, but don’t want to start from scratch!! No, I didnt use Donna Hays cake mix or Zumbo’s, I used Greens chocolate brownie mix at $2 a box. So thrifty! The secret is in the pimping.

Double Chocolate Cheesecake Brownie recipe
1 box of Greens (or any brand) brownie mix
4 tablespoons butter, melted
100g best quality chocolate you can find
Empty cake mix into large bowl.
Add eggs and butter, stir to combine well.
Pour into to greased pan. Grab your chocolate and brake into pieces. Stud the brownie mix with chocolate pieces, push down into the mix.
Scoop teaspoons of cream cheese and dot mix very very generously. Swirl slightly so its not sitting on top of the mix.
Bake for about 45 mins until cooked around the edge but still a tiny bit wobbly in the centre. This will yield a gorgeous molten chocolate centre.
