Chia breakfast pudding with pomegranate and raspberries

Ingredients

3 tbsp Chia seeds

1 cup milk (dairy, coconut, or nut milk of your choice)

2 tsp maple syrup or honey

1/2  tsp Cinnamon

1 tsp vanilla

about 1 tbsp. Pomegranate seeds and raspberries mixed together

Method

Mix all ingredients together (I like to use a jar with a lid so I can shake vigorously). Be sure to mix the chia into the milk thoroughly, otherwise you will end up with a chunky pudding. Let sit for 1 hour, then mix again.  I like to refrigerate mine over night.

After chia has sat and soaked up all the liquid, spoon 1/2 the mixture into a bowl. Layer 1/2 the pomegranate mixture over the chia pudding and top with the rest of the pudding mixture. Spoon the remaining sauce on top.

Substitute with any fruit of choice.
