This is such a beautiful summer salad on its own or perfect side at your next barbecue. It takes next to no time to prepare.
1 chorizo sausage(approx 120g), sliced
1 medium chicken breast, diced
2 tsp KEEN’S curry
4 medium potatoes, boiled and diced
1 spring onion, sliced
2 tbsp sour cream
6-8 green tiger prawns, shelled and deveined
salt and pepper to season
1.In a hot pan, fry the chorizo until crisp, then set aside. Add chicken to the pan and brown in chorizo oil.
2.Add curry powder, potatoes, spring onions and chorizo to the pan, toss and add sour cream
3.Stir and simmer gently. Add prawns, simmer 2 minutes then remove from heat. Season with salt and pepper to serve.
