If you’ve never made home made mayonnaise before, now is the time. My recipe is just like making a smoothie. Put all the ingredients in your blender and go for it. Watching the ingredients emulsify into a gorgeous thick velvety mass is my kind of miracle. Once you have made your own, its unlikely that you would go back to store bought. My version takes all of 15 seconds and makes the drizzle method completely redundant.
Try different flavours
My version uses lemon and whole grain mustard for flavour but I’m thinking my next batch might taste fabulous with orange zest and dill. Go wild with your flavours and use what you like.
- 1 tablespoon whole seed mustard
- juice of half lemon
- zest of whole lemon
- 3/4 cup oil
- 2 tablespoons vinegar
- 2 eggs yolks
- Place all of the ingredients above in your blender and blend until its a thick glossy mass. If you like a thin mayo, add a little water. Start with about 1 tablespoon.
