Little goji, cashew and coconut cakes

These little cakes are the product of combining and random selection of the dozens of packages of super foods, nuts and other bits of pieces I have in my pantry (yes I fall for super foods too :))  When you add the blended goji, cashews and coconut to the flour mix, it doesn’t quite blend in and makes little gems of delicious texture after they are baked.

Ingredients

2 tablespoons of goji berries

1/2 cup shredded coconut

1/2 cup cashews

1 and 3/4 cup SR flour

1/2 sugar ( cane, stevia, coconut)

1/2 oil

1 cup of milk

Method

1. Preheat oven to 180 degrees. Line 12 cup cake pans.

2. Blend the goji berries, coconut and cashews to a fine paste.

3. Combine the paste, flour and sugar.  Add the oil and milk and gently fold until just combined, being careful not to overmix.

4. Fill your patty cake pans and cook for about 20 mins, but you will need to check.

Notes

These are great to freeze for later.  For special occasions, ice with pink icing and additional fresh coconut.
