Mango, almond and vanilla bean “ice-cream”

This is a gorgeous healthy sweet “ice cream” treat that would be perfectly acceptable to eat at breakfast or when you want a sweet treat after dinner, without too much indulgence.  It’s super smooth and glossy with the nuts filling out the flavour and adding a great balance to the sweet mango.  I like it just as it is, but after tasting, if you prefer it a little sweeter, just add your favourite sweetener.

I make this using my home made nut butter, but if time is against you, just use your favourite store bought almond or cashew butter.  I’ve also made this with a butter made from mixed nuts, with equal success, so if you are making your nut butter from scratch, and you only have mixed nuts, then go for it.

  1. 1 1/2 Cups Frozen Mango Chunks
  2. 2 tablespoons of almond or cashew butter or a combination of both
  3. Seeds from Vanilla Queen 1/2 vanilla pod, or teaspoon of Vanilla Queen vanilla paste
  4. 1/2 Cup Coconut Cream
  1. Place all of the above ingredients in a high speed blender and blend until beautiful, smooth and glossy. This will take a minute or two. Eat as is or put back in the freezer for a while to firm.
  2. Enjoy!
