One pot pesto pan chicken

Do I have an obsession with Pesto?  Possibly. I do love it and always seem to have a batch of freshly made pesto in the fridge.  In the case of this recipe, where speed is of the essence, a bottle of bought pesto will do the trick nicely.  Just buy a good brand.

  1. 2 tbsp olive oil
  2. 1 large onion, thinly sliced
  3. 200g bacon chopped
  4. 1 red pepper, sliced
  5. Shredded chicken from 1 BBQ chicken
  6. 200g baby spinach leaves
  7. 250g cherry tomatoes
  8. 100ml cream
  9. 2 tbsp basil pesto, plus extra for drizzling
  10. Small handful of fresh basil leaves to serve
  1. 1. Heat 1 tbsp of the oil in a large sauté pan, then soften the onion for 5 minutes. Increase the heat, add the bacon and pepper, then fry until the bacon is crisp. Remove to a bowl using a slotted spoon.
  2. 2. Stir in the spinach, tomatoes and chicken then cook for 3 minutes more until the spinach has wilted and the chicken is cooked.
  3. 3. Pour over the cream and stir through the pesto. Warm through. Check the seasoning, then drizzle with extra pesto and scatter over the fresh basil leaves. Serve with steam rice if you want to make this dish go further.
