Orange and lemon cookies (gluten free)

Get ready for a sensory overload, these are brimming with the wonderful scent and flavour of citrus.   Chewy and deliciously moist, these are amazing!

  1. 1 and 3/4 cups almond meal
  2. 1 cup brown rice flour
  3. 1 cup coconut
  4. 3/4 cup brown sugar
  5. pinch salt
  6. 1/2 tsp turmeric for added lemon colour (optional)
  7. Zest of 1 orange and 1 lemon
  8. Pulp of 3 oranges and 1 lemon (place flesh only in a blender until finely blended)
  9. 55 g melted butter
Citrus Glaze
  1. 3 tablespoons icing sugar
  2. 1 - 2 tsp lemon juice
  1. Preheat oven to 180 deg, line 2 baking sheets with parchment.
  2. In a large bowl add almond meal, rice flour, coconut, sugar, turmeric (if using) and salt.
  3. To the melted butter, add zest and flesh of oranges and lemon.
  4. Add the butter mixture to the dry mixture and stir gently. If it feels too runny, add a couple extra tsp of rice flour. The mixture shouldn't be runny, firm but not dry.
  5. Grab spoonful of mixture, roll into a ball and place on your baking sheet. Flatten slightly to make even little discs.
  6. Place in oven and bake for about 15 - 20 mins. They should be very lightly golden.
  7. To make glaze, add icing sugar to a small bowl, then add juice drop at a time until you reach a pouring consistency. Drizzle over cooled cookies.
