Potluck mint and parmesan slaw with sesame seeds

Um, in amongst all the cakes, nibbles and bubbles for the festive season, a big bowl of mint, parmesan and sesame seed slaw might be the go. This slaw is a great example of a potluck dish turning out really well, all within a time frame of about 7 minutes. Adding a little flair with the parmesan and sesame makes this side dish a little special.

Whilst I could quite happily have a bowl of this slaw for dinner with some nuts scattered over the top, that may not be for everyone. But there’s still no reason why you cant make this slaw the hero of tonight’s dinner, just serve with a piece of pan fried or baked fish or chicken and you’re done. You can have dinner on the table in less than 30 mins, but the real point here is, its stress free cooking – isn’t that what its all about?

Potluck mint and parmesan slaw

  • Prep time: 7 minutes

Yields: 4 serves

  • 1/2 head of cabbage
  • 1/4 head of cauliflower
  • 1 carrot
  • 1/2 bunch mint
  • 1/4 parmesan
  • 2 tablespoons sesame seeds
  • Good quality salad dressing of choice - I used Cardinis Caesar dressing

As all of the above ingredients wont fit in a food processor at once, first, put in the cabbage and carrot and process to your desired texture. Remove to a large bowl, then add the cauliflower and mint and process. Add to your bowl.

Add the parmesan, sesame seeds and the mayonnaise and combine well.
