These pancakes are choc full of such lovely, whole ingredients and they make a healthy treat for breakfast. I’ve used a combination of oat and spelt flours which work really well in this pancake mixture. The addition of ground goji imparts a lovely golden hue along with a super punch of nutrition. Top the whole thing of with maple syrup, extra goji and raspberries, and life is good.
2 tablespoons ground goji (I grind these in my nutribullet - if you don't have one of these just add them whole).
1 cup milk
1 tablespoon oil
Extra goji berries
Add flours and ground goji berries to a large bowl. In another bowl combine the eggs, milk and oil, mix well until the egg is well incorporated.
Add the milk mixture to your dry ingredients and gently mix until combined.
Heat a non stick frying pan on high and brush with oil. Using a ladle, spoon 1 ladle-full into pan, to make a 12cm circle. Cook for 2-3 mins or until bubbles surface. Flip and cook the other side for 1 min.
Serve with maple syrup, raspberries and extra goji berries
If you don't want to use spelt or oat flour, simple swap with plain wheat flour.
