Vegan pumpkin pie smoothie

I just need to say right from the start that this smoothie is devine! Like pumpkin pie in a cup, but healthier. Yesterday I went shopping at the markets and bought a massive pumpkin for $2 – it must have weight at least 5kg. So, I couldn’t walk past it, and before I returned home had thought of five fabulous applications for it. The first being a smoothie.

It’s unbelievably hot this year in Qld where we are holidaying, and my kids seem to want to exist on fruit smoothies!. This time I mixed it up a little and made this delicious concoction! It’s delicious, healthy, filling and delicious! (did I say that already?). I’ve used coconut yoghurt in this recipe, because I love it and also because the store across the road from the beach sells it in abundance. If you cant get your hands on coconut yoghurt, don’t worry as its equally as delicious without it.

It’s fabulously delicious, creamy and sweet with the honey, but not sickly sweet like some fruit smoothies can be. I highly recommend you try this. You could also add chia seeds or goji berries to amp up the nutrition.

Pumpkin pie smoothie

Yields: Smoothie for one

  • 1 cup coconut or almond milk
  • 1/4 cup steamed pumpkin
  • tablespoon of honey or to your liking
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • tsp lemon zest
  • ice
  • coconut yoghurt

Put all of your ingredients in a blender and blend away until deliciously thick and smooth. Top with a dollop of coconut milk yoghurt. If you cannot come by coconut milk yoghurt simply leave this step out. Your smoothie will be just as delicious.
