Warm mustard, lemon and herb potato salad

Potato saladThere was a time when I was frightened to eat potatoes.  A ridiculous decision.  I now realise potatoes are part of a normal healthy diet, are fat, cholesterol and sodium free, are full of potassium, vitamin C, B6, fibre and iron.  Andtughfp
are full of energy giving, and brain building carbohydrates.  This is my standby potato salad which is a breeze to make and great with barbecued anything.


8 potatoes, I don’t bother peeling mine

100 ml olive oil

4 tablespoons of white vinegar

1 tablespoon Dijon mustard
1 tablespoon seeded mustard

1 lemon or lime juiced and zested

3 tablespoons capers or olives would work

handful parsley

handful of dill or coriander (or a mixture of both)


1. Cut potatoes on diagonal in 2 cm thick slices and cook in boiling water until tender, drain well and steam dry.  Place in a large bowl.

2. Mix oil, both mustards, vinegar, lemon or lime juice and zest.  Mix well.

3. Pour dressing over potatoes then fold through herbs and capers.  Toss gently to combine.

4. Serve warm.

This amount serves about 8.  Its also super delicious eaten the next day!.
